豆乳鍋 [料理]
台所の縁の下で、腐りかけのニンジンを発見。腐った部分は取り除いて。でも、こんなにニンジンをどうしよう。
とりあえず、乱切りにして圧力釜で茹でてみました。そうだ、ニンジンペーストにして冷凍だ。
クリスマスには、パスタに練りこんでみようかな～。ホウレンソウも練りこんで、イタリアンカラーのパスタでも作ろうかなどと、いろいろ考え事をしていたら、テレ朝の「上沼恵美子のおしゃべりクッキング」で豆乳鍋が紹介されていました。思い出したのです。なんとタイムリーなことか？。先週の南禅寺どうふセットで、唯一余っている豆乳。ということで、今日の夕食は豆乳鍋にします。また鍋ですね。週３回鍋ですよ。
できるだけテレビ通りに作ってみます。でも、とりは手羽ではなく、水菜もないし、豆乳は生タイプだし、しめじもないです。
材料：鳥（骨付き）・大根・白菜・ネギ・油揚げ（稲荷寿司用の既製品）・春菊・焼き豆腐
出汁：豆乳（加工品）・ほたてしいたけスープの素・チキンコンソメ・白みそ
たれ：だし醤油・しょうがのしぼり汁
鳥は臭みを取るために湯通しをします。土鍋にスープを作り、鶏と野菜を煮ます。最近このスープの素にはまっています。これ、かなり行けますよ。
あとは、適当に茹でます。最後に、白みそを土鍋に入れて準備完了。ここからがポイントです。別鍋で豆乳を温めておいて、食べる前に火を消した土鍋に豆乳を投入（しゃれじゃないです（漠））。「決して、豆乳を入れてからは煮込まないでください。分離します。」とテレビで、和食担当の濱本先生がおっしゃっていたので、このようにしてみました。
下仁田ネギも入れちゃいますよ。結局、豆乳は足りないと見て、コンビニへ買いにはしりましたけど、なんとか完成です。

無調整豆乳でしたら、市販のにがりを混ぜて、
電子レンジでチンをすれば、ざる豆腐のような
柔らかめのお豆腐ができますよ＾＾
豆乳鍋はまだ食べたことが無いです。牛乳が苦手なので
